Incoming SMTP should support STARTTLS

Description
Our incoming SMTP server should support STARTTLS. (It could be tricky to get this right with SNI and vhosts.)

Do mail servers bother to verify the hostname? (If you'd be willing to do non-TLS, there's not much reason to...) If not, we don't actually need to get this right.
