  • 1 cup Calamata olives (unpitted)
  • a Nice slice of Feta cheese
  • 1 cup olive oil

  • First start preparing the pasta, bell peppers (if needed) and beets:

    • Broil the bell peppers until blackened from all sides (turn every now and then), Then chill in plastic bag and peel skin
    • Boil the beets with their skin in water for half an hour. Peel the beets (very easy with hands under running water).
  • In the meantime, prepare the dressing:
    • Chop 1/2 cup of basil
    • Whisk vinegar, oil, mustard and spices (to taste) until smooth, add basil
  • When pasta is ready (drained and washed) toss pasta in dressing and let sit in large bowl
  • Cut remaining basil into strips, add to pasta
  • Cut beets and peppers into smallish sizes and add to pasta
  • Cut Feta into small cubes and sprinkle on salad
  • Sprinkle olives onto salad
  • Chill, covered.
