Pasta Salad

Ingredients:
- 500gm Pasta
- 2 cups fresh Basil
- 1 large Beet (or several small ones)
- 2 Roasted Bell peppers
- 1 cup Calamata olives (unpitted)
- a Nice slice of Feta cheese
- 1 cup olive oil
- 1/2 cup red-wine vinegar
- 1 tbsp Dijon mustard
- salt, pepper
Directions:
- First start preparing the pasta, bell peppers (if needed) and beets:
- Boil the pasta in water until ready, drain and wash with cold water
- Broil the bell peppers until blackened from all sides (turn every now and then), Then chill in plastic bag and peel skin
- Boil the beets with their skin in water for half an hour. Peel the beets (very easy with hands under running water).
- In the meantime, prepare the dressing:
- Chop 1/2 cup of basil
- Whisk vinegar, oil, mustard and spices (to taste) until smooth, add basil
- When pasta is ready (drained and washed) toss pasta in dressing and let sit in large bowl
- Cut remaining basil into strips, add to pasta
- Cut beets and peppers into smallish sizes and add to pasta
- Cut Feta into small cubes and sprinkle on salad
- Sprinkle olives onto salad
- Chill, covered.
